What distinguishes seasoned UX pros, in my view, is knowing which of the tools and techniques to use for the problem at hand. Not every project calls for personas, customer journeys, qualitative research, etc etc. The boot camps seem to promote the idea of a lockstep set of artifacts. So I would tell candidates to discuss process in terms of why you chose which tools and techniques and discarded others. My two cents!
