Are you talking about UX Design Bootcamps? I don't believe that good UX design has much to do with "taste" as it has to do with judgement: Learning how to determine what questions need to be answered and the best processes, tools, and techniques to use to get answers. AFAIK, these Bootcamps teach a rigid process and the portfolio work reflects that.
